When using Data Import to create your own datasets in Analyze, the conversion process will automatically recognize variables that should be verbatim questions and assign them as verbatims in the imported dataset.
You can also change the question type of any question when using Data Import, by selecting the question and choosing a different option, such as category or numeric.
